A raw bar is a cold surface and a knife. The rest is theater, and we are bad at theater.

We crush the ice twice. Once when it arrives, once before service, so it does not weld into a brick halfway through the night.

When a tray looks low, it is low. We would rather cross a name off the list than stretch it.
